How do I go about reading the Church Fathers? There are too many names and works. Any thoughts?

Start with the sayings of the Desert Fathers. From there you can go either into more mystical ascetical literature, or more theologically focused literature.
The homilies and biblical interpretations of the Fathers are also really good. Top recommendations: The Cappadocian Fathers (St. Basil is more accessible), St. John Chrysostom and Maximus the Confessor

I am reading On the Cosmic Mystery of Jesus Christ by Saint Maximus the Confessor. It is very good. It explains Christian theology and metaphysics in a very robust and systematic way so that everything comes together and makes sense. It shows that Christianity is irrefutable. It also proves gnosticism and evolution wrong.
