They don't. Practicing Buddhists (i.e. monks) take a vow of poverty. Everyone else is just trying to earn merit enough to be reborn as a monk.

Buddhism is the middle path, everything excessive is harmful in it. For monks, there are clearly defined restrictions that enable them to practice without hindrance. For example: eating too much is harmful, eating too little is harmful, the monk eats as much as is necessary for life.
For the laity, the only limitation is not to do bad deeds.
