The Egyptians, who catalogued everything, have written literally nothing about Jews, and all the events in Exodus. Which means that this whole bit in the Bible is literally fanafiction and propaganda. Going off that, how am I trust literally anything else the Bible says and accept it as truth?

They didn't, and what they catalogued was frequently embellished for propagandist purposes.

Most mythology and plenty of ancient historiography is fanfiction, in the sense of having a real historical event as a starting point, but being embellished and deformed through generations of retellings, ideological and religious interventions, etc.
Here's a question, though - how is it "propaganda"? How is it in any way a good thing to say that your nation was a bunch of slave cucks for generations?

The Bible is a bunch of various texts, with different histories and goals, written in different places and across many different centuries. I wouldn't put them all in the same class of trustworthiness. The Bible's historicity in general doesn't seem worthy of consideration (at least to me), other than in the newest parts. If that's the level of "fact-checking" you're going after, already the first verses are contradicted by current science.

The Jews were not important enough to the Egyptians to even write about. That's mainly why. The Egyptians quite literally did not really think that much about the Jews, because they were a seething non-entity.
