Meat putrefaction as always been an element of cuisine. Gauls would already hang ducks by the neck and let them sit until the neck disconnected on its own, that was when you knew the meat was ready. But you still prepared or salted it. And you didn't do it with any kind of meat, in any kind of weather, and you probably ate something else too to help your stomach ease up a bit.
