I've never read a cowboy story yet, but I've enjoyed some of Ambrose Bierce's short stories and found out about this collection: An Occurrence at Owl Creek Bridge and Other Stories.
>This collection boasts the best of his Civil War tales, including Chickamauga, A Horseman in the Sky, and the author's much-imitated masterpiece, An Occurrence at Owl Creek Bridge. Writers of mystery and suspense stories have long been influenced by Bierce's tales of the supernatural such as The Moonlit Road, and The Eyes of the Panther. This anthology also features Oil of Dog, My Favorite Murder, and other satirical fables that continue to captivate readers with their humor and ingenuity.
I have it on my list and it might be interesting to some of you.

This collection is decent and has an interesting introduction by John jakes where he argues that Star Wars was the beginning of the end for the Western genre because space-opera covers much of the same ground as western fiction, as far as characters, vistas and a sense of heroism goes. I don’t know if it’s true but it sounds right. Even though sci-fi existed before Star Wars, space-opera was probably the final nail in the coffin.

This is the only Western novel I've read. It's pretty funny, longest chapter is ~1 page.
The Mammoth Book of Westerns is a pretty good short story collection, although I'm only halfway through.
