If you want a serious answer, here are some good books for beginners:
1984 and Animal Farm
Farenheit 451
A Christmas Carol
Alice in Wonderland
The Count of Monte Cristo
The Lord of the Rings

After that just go with what interests you, whether its the Greeks, or Russian novelists etc

I'm really not bothered with any of these but are they all fundamental before I start reading more literature?

No they aren't fundamental, assuming you haven't read in a long time they're just easier and more accessible books to start out with since they're shorter and easier to read than most other books. After you feel more confident, you can branch out.

Of course if you want to start out on major literature you can start with the Iliad and Odyssey (Greeks) and work your way chronologically to Shakespeare etc.

I bought A Farewell to Arms, so I might as well read that first and then go from the Greeks that you listed

Hemmingway is also a good place to start. If you like him you can also try his The Sun also Rises and The Old Man and the Sea.

Should I be looking at some books from an analytical perspective to find the "meaning" behind them?
