What is the most literary language? I would like to learn another language primarily for reading.

You can learn it in a year if you're dedicated. There's plenty of works in Attic Greek to occupy you for quite a while. Then after you finish with that you can move on to Koine Greek and read the NT and a ton of other stuff.
