In regards to the Gnostic Gospels, many of them, were likely written by the more initiated Gnostic "sages" under the pseudonyms of the Disciples of Jesus (Some of them may have actually recieved these teachings from the original John, Thomas, etc.).
Although they may not be directly from the disciples themselves, they still contain metaphysical truths.

Some of the "Gnostic" Gospels, especially The Gospel of Thomas which OP quoted, have actually been traced back by scholars to have been written before the Gospel of John, and, particularly the Gospel of Thomas, is very likely an Authentic collection of sayings of Jesus . Some Sethian texts such as "the Apocalypse of Adam", "Eugnostos the Blessed" and "the Sophia of Jesus Christ", some scholars have also dated them to have been written at the same time, or even before the canonical Gospels.
But there is always debate among scholars to the exact date/authenticity of them, nobody can know for sure.
