If you're thinking of stuff like this, essays really are better than novels.

For actual literature imo Alice Munro's psychological insight is unmatched, and she mostly writes about women. Arlene Heyman I found quite good as well, she also writes about women from young to old. Of the male authors David Vogel stands out to me as someone able to capture women's feelings well, specifically in a Viennese Romance. I have never personally read Flaubert but he is supposedly great at it as well.

Again though, these will focus more on women's perception of themselves and the world, their feelings, their choices and so on - not the physical realities of a female body.
