What defines good writing and what differentiates good writing from bad writing? I feel I'm in some sort of nebulous state of mind where I'll be unable to tell whether someone's writing is particularly good or not. If anyone can give me something to read on the topic or give me things to cross-reference to understand the difference between the two it would help greatly.

Imo good writing is a measure of how close the effect of the writing is to the authors intent. For example, a well written horror story should make you scared, a book that's supposed to be depressing should make you depressed, etc. This is a gross simplification and there's much more to it than that, but I think that's a good place to start.

Yes they are, sincerity is speaking honestly, from the 'heart'. It's not sacred, everyone who writes a sappy love poem is doing it - that doesn't qualify it as good writing.

they're not speaking from the heart, they're not even aware of what's going on in their own minds. They're acting purely out of a desire to appear a certain way socially, and they aren't even aware that that's what they're doing.

You need to read more. The only way to beome a better reader is to read more. There are no shortcuts.
