My Spanish-speaking world literature professor recommended us the translation by Tom Lathrop. It's the best for most readers, because it's non-literal, which means the poems fit the original meter and rhyme scheme, the jokes are rephrased so they'll make sense to a layperson, and there's a ton of useful footnotes.

Never would have caught the joke without the footnote, and I'm a spic.
