If you're interested in christianity the sayings of the desert fathers is a great place to start. However, as a christian, I would caution against reading much beyond the desert fathers and the bible. The Church is designed for the illiterate, and consulting a priest/going to liturgy is more important for your spiritual health than reading complex theology... hence the reason we have priests.
If you want to start from a secular angle, hesse is great.
Mysticism is more about asceticism and prayer than anything else. It doesn't necessarily have to be strict fasting, hesse was a nudist and foraged for food on a paleo diet while wandering europe. Just start small and stear clear of meditation and new age/hermetic bullshit.
