I don't have much fiction.

Then and Now, William Somerset Maugham - though i dont remember it being all that good. In fact it was the novel that made me give up on Maugham as a writer.
The Decameron - Lots of fun and has plenty of documentary detail for the city
Italian Journey, Goethe - The Florence bits are quite good.
Italian Hours, Henry James - the book that made visit the city originally. Lots of later period detail
John Ruskin had produced quite a few guidebooks for the city, though being later in his career he was already extremely bitter about most of it.
The Merchant of Prato - Only partly in Florence but it may as well be.
The House of Medici - again, a big one for most people.
Reading any Dante along side any suplimentray books ( i recommend Reading Dante: From Here to Eternity ) will also give you a solid grounding in the pre renaissance city.

The writing is a bit simple in structure but AGD is above the average cut for popular art critic. The fact that he is now a full time TV presenter is a little sad but Italy Unpacked is kinda fun.
i even took one of his online courses a while back, as i was one free from my uni.

You need to read the Platonic Theology (6 volumes, I Tatti Renaissance Library edition) which is his magnum opus, and maybe the Three books on life. Another major work is The book on love, but it's in Italian and thus it has never been translated, afaik. English scholars ignore everything that is written in Italian. However you can still find the Commentary on Plato's Symposium, which is also a treatise on love.

Nope, the only thing that opposes the humanist trend is the so-called "weird Renaissance", or "anticlassicist Renaissance", with antisystem writers such as Villon, Rabelais, Luigi Pulci, Merlin Coccai (Teofilo Folengo) and basically anyone who opposed Petrarch and Bembo. The most magical side of the non-fiction literature is also considered antihumanist: Bernardino Telesio, Pico della Mirandola, Paracelsus, Giordano Bruno, Giulio Camillo, partially Nicholas of Cusa and fundamentally all the alchemists.

he will send you down some wrong paths. He is opinionated and such an extremely good writer you will more then likely be convinced into liking and disliking things based on nothing more then his word. Still a recommendation if nothing else

i dont quite approve of the bottom section of the pic, but it's a bad little list.

Renaissance literature in general has a shit ton of occultism. The vast majority of the books on the right side of this chart are more or less esoteric.

Pico della Mirandola, Ficino, Alciati, Colonna, Bruno, Campanella, Cardano, Della Porta, Pomponazzi, Della Riviera, Pietro d'Abano, Paracelsus, Agrippa, and all the others up until Johannes Valentinus Andreae and the modern alchemists.
