G. K. Chesterton's "Orthodoxy". Dude was an atheist that became a catholic throughout the years. He was also a really good writer, so the book is actually engaging for essay standards.

Reminder that Chesterton was perfectly capable of remaining on very good terms with people he disagreed with, and often maintained a spirit of friendship with his bitterest enemies.

Chesterton wrote aphorisms, short stories, novels, poems, essays, plays, philosophy, and theology. However, what was he best at? What medium did he really shine in the most?

I'm going to say he was best as an essayist. The Father Brown stories are great, as is The Man Who Was Thursday, but it was in his essays that his biggest talent came forth.
