There is a bit of white washing and orientalism when people discuss sufiism nowadays. The reality is the most hardcore islamic jurists in history were sufis. Hell even the Taliban has a lot of sufi beliefs, along with ISIS using the works of the infamous Sufi scholar Ibn Taymiyyah. If you want to learn more about sufism and Islamic mysticism in general. You can just check out the works of Ibn Arabi. Hes considered the father of the subjects.

sufi is not a sect like sunni or shia is. Sufi is a method of worshiping. A vast majority of sufi scholars were sunnis and sharia jurists. Orientalists make it seem like sufis were some dancing partying goofballs, when in reality they were historically the most devoted to their relgion. Even ISIS uses a lot of sufi literature in their propoganda, specifically ibn Taymiyyahs work.

Ibn Arabi, Al-Ghazalli, Averroes, Avicenna, Ibn Khaldun for Philoshopy. If you want to read an amazing documentation of perhaps the greatest adventure of all time read some of Ibn Battuta a berber chad. He traveled from Tangier to China and had 100s of wives and families along the way. If you want to understand a little about modern Islamic warfare you can read Ibn Taymiyyah. But be careful with him, he wrote while he was fighting the Mongols so his work can really fuck you up. If you're interested in Islamic Astronomy which was a major field of research for them you can check out Ibn al-Haytham, Abu Maʿshar, Ibn Qayyim al-Jawziyya, and Al-Biruni. There is a black poet named Al-jafiz who among other things wrote about the superiority of the black man over the arabs, pretty useless but interesting nonetheless. Also if you're interested in the occult you can try to find Ghayatt al Hakim(picatrix), a "book of spells" from islamic arab and berber history, you may need to know arabic or spanish to read because i dont think its in english. Contrary to what /lit/ says there is plenty of interesting work to be found in eastern and islamic philosophy, i've delved in to some of it but their is plenty more.

Also along the way of looking in to this stuff, you will come across a lot of butthurt persian nationalist claiming that "it was all persians" but that is simply not the case. There were almost an even amount of persian and arab contributors with a lot of Turkic and Berbers mixed in. Modern persians just really hate arabs and turks. Just wanted to bring it up so your research doesn't get muddied.
