Is the quality of most of the doujins so good that I can really just pick any random thing out of a hat and expect it to be good?

Flipflops, Tohonifun, Haniwa's Store or whatever it's called; I don't know, I don't actually read too much touhou doujins. I just play the games and fap to the characters and collect thousands of images

They vary widely in quality and content. Like pretty much all doujin for a fandom it's really subjective. For example, I like the diabeetus-laden Hole of Yago circle while a good amount of people hate it. >>895412 has a good list to start with.

start off slowly with doujinshi featuring characters you like, even if you don't know much about them you usually start to recognize them and grow a liking to a handful.

anyways, usually your beginning doujinshi shape how you think about those characters, I find. but try to get a feel of how other artists work with them. once you're over getting the idea of the few touhoes you do like, you can move on to reading ones featuring other characters.

for me, i started off with ennui akadako, moved onto aki eda after taking a liking to the marisaxreimu pairing, then branched off into doujinshi about SDM, and now I'm reading ones like flipflops where its everyone all together

Try Can't Fix the Helmet or Dioxin if you like Cirno. Also Gaku Gaku Animal Land to download some doujins.

Depends highly on your taste, whether you prefer canonical portrayals of characters or fan-portrayal of characters, if art is important to you or not, if you prefer slow-paced things or faster-paced stories...

Just pick some out randomly. You'll either love it or hate it. Also, don't talk about Touhou here, because /jp/ sucks ass for any real Touhou discussion. Just keep it to yourself, buy a dakimakura, get some wall scrolls, and keep Touhou thoughts to yourself.
