All of them are translated, just google it. Imperishable night is the easiest I think, so start with that one. Start on normal, starting on easy will teach you nothing, just keep continuing and learning as you go, eventually you will get the hang of it and learn to dodge like a pro. Some spell cards just require memorizing and that kinda sucks though, thankfully IN does not have many like that.

The most intuitive is EoSD because it's all reflexive. You don't really have to learn any complicated patterns as long as you can dodge basic ones. It was the first one I ever cleared and, in my opinion, easier than IN (fucking stage 4 Reimu).

Marisa is harder in my opinion, I can do all of rainmoo's spellcards except that one where the wards/cards/whatever chase you.

You can go for Embodiment of Scarlet Devil, which has the simplest gameplay, or you can go for Imperishable Night, which is the easiest game of the series. All the games are translated and they're everywhere on the internet, so you should have no problem just googling or searching on Torrentz.eu. Same goes for the translation patches.

In fact, I decided to save you a few minutes and googled Imperishable Night for you, both the installer and the English patch:

And read the basics part of the Touhou Wiki's guide to general strategy. I wrote a few things there that are good to know if you're a beginning player. Mostly it's about a change of attitude, because approaching Touhou is very definitely not like approaching Gears of War or Mass Effect.

Is IN really considered easiest of the series? I was out of practice for months so went back and played some of the older games, and I found IN the hardest. I actually got to the final bosses in EoSD and PCB(yes I Know I'm shit) but I don't know if I ever actually fought Sakura.

IN lets you have a huge amount of lives, has Team Broken with Reimu/Yukari and let's you practice spellcards. It also has the easiest stage 5 boss.

That's probably why many people think it's so easy.

First time I saw Reisen I thought there was no way in hell I could ever clear that stage. Nowadays her spellcards aren't looking all that intimating. Though perhaps the same could be said of all Touhous.
