Why so often in mangas or doujins there are situations that characters jump into conclusions after simple things like one says "Hi" and instantly other one thinks "Oh he/she is so and such blah blah blah"...

HELL how do they estimate personality of other so quickly? I know it's just manga and it's probably lazy writing, but I knew that Japanese do the same in real life. For them it's enough to look on photo and they already judge people and "know everything" (in their opinion) about others.

So could anyone explain this for me, please? Is it something that Japanese do? And how do they do this?

People do that all the time OP. When I look at a greasy haired, fatass with a neckbeard wearing a black shirt, I already know he browses 4chan, watches anime, is into metal, and plays a lot of video games. Not to mention he also will also feel he's at a completely different level of intelligence than everyone around him.

I can also look at the girl in the low riding skinny jeans and and generic one color skin tight shirt, with straightened highlighted hair, and tell she's a massive slut who's had 30 dicks in her by the end of her freshman year in highschool. I can also look at any black person and tell they're a good for nothing.

It's called stereotyping and profiling OP. How stupid can you get.
