I am going to be recreating the setting of a Touhou game in Minecraft.

Not sure which game to recreate.

There will be a themed area for each stage of the game, including extra stage (ice fillled lake for Cirno, that floaty shrine thing for the Prismriver sisters, etc) and a complex automatic rail system to take you where you want to go from a system of levers in one place.

Mods I will be using:
Flymod, builder mode, and in-game inventory editor

so materials and floating structures will not be a problem.

Which game should I build? (Leaning towards Embodiment of Scarlet Devil)

Also I want suggestions, as I may make a server out of this map in the future. (I am aware of the Gensokyo server)

There's a town of Oni underground, and they don't go around stooping to avoid hitting their heads on the rocky roof. They even have danmaku duels, so you know the roof is extremely high up.

You can still enjoy an eagle view of it, you'll just need to cover the sky in rock.

MoF would be amazing and potentially doable if you were to bring the average map height down to almost bedrock.
Pity the max height is so goddamn low, it's why I can barely be assed to play Minecraft anymore. I can't let my autism flow freely if I can only build a couple hundred blocks up.

OP here- building Embodiment of Scarlet Devil first.

99% of effort will be done on the SDM. Currently have: Dark cave-forest for Rumia/stage 1

and a giant ice pillar on a frozen lake you ride through with a 9 on it for Cirno.
