It's been a long time (played it when it first came out, haven't picked it up since) but the dialogue really has a heavy ye-olde-English thing going on. If you're worried about fluff, that and the new cutscenes are probably the biggest changes.

I thought that the new writing style was flavorful and interesting, and that the cutscenes were well-done, but I know some people think the changes are cheesy and obtrusive. Your mileage may vary.

There's nothing wrong with FFT's original translation and is a hell of a lot more fun and better overall than any "serious" retranslation of the game.

Besides, the rebalance/"hard" patch is better and the retranslation patch is not up to date with the rebalance one.

Nobles in a Medieval Europe analog speaking flowery? That is totally believable. Notice that the "common" characters speak more bluntly.
