Oh, you can.
Touhou has a gigantic amount of fanmade content - everything from fanart, through remixes and arranges of the game music, fan made manga(some of which is made by professional artists and/or pretty high quality), games, all the way to fanmade anime.
Sadly, while I agree that Akyuu is adorable, she isn't very popular as she didn't appear in the games. But still, there are at least some doujinshi(fan published) manga that feature her, I'm sure someone here with better memory for names than me can point you in the right direction.
