"Touhous" doesn't directly refer to the inhabitants of Gensoukyou, just the characters that appear in Touhou Project as a series. Last time I checked Mary and Renko were also Touhous, and Sanae was a Touhou even before coming to Gensoukyou.

OP, if you're an engineer, processing language shouldn't be a problem for you. Because, you see, language has rules on creating new words. Names for inhabitans of lands in English are usually the same as adjectives created from the name of said land.

Germany -> German(s)
France -> French
America -> American(s)

Gensokyo -> Gensoky(o)an(s)

It's a pity you need help with this.
