I've "played" about an hour of it, does the player ever actually get to do.. well, anything? Influence the story at all...? Maybe?

yes...there's a ton of bad endings, route splits, temporary splits, etc.. it really picks up, and doesn't stop for much once it does. give it more than an hour.

And no, you do not get options in the Prologue. You will get to when the narration switches from Tohsaka Rin to Emiya Shirou.

Not really, the only sensitive choices are the ones who gets you either on Fate, UBW or Heaven's Feel scenarioes.
Once you get into one of these you can get into one bad end or the other depending on some choices, then at the end you might get either a good or a true ending depending on the last choices, you might like one or the other depending on your tastes.
But the routes unlocks in this order Fate -> UBW -> HF, you can't get for example in HF's route in the first playthrought, you can try but you'll get a bad end instead.
If you like having more freedom then you could download a savegame with all the routes unlocked, but you WILL be losing bits of story and some things will not be explained because it's assumed you already know about them.
