somehow, I don't think the idea of a touhou animu would fly too well.

Mostly because of so many contradicting fanon interpretations of the characters. An anime, simply by existing, would imply a standardized characterization that some people would be incredibly butthurt by. Mainly the yuri shipperfags.

start from game 6 and do two episodes per game going up, so that's 6 games, with 12 episodes, and sure let's add filler episodes with the .5 games in between.
For the basic touhou games, shows the plot, all the playable characters head out, maybe at the same time, may pop up to save the day at a certain boss to get specific canon fights.
Boss 1-3 plus midboss for the first episode and boss 4-6 + extra boss and wrapping up the plot, where each fight should only last about 5 minutes, showing most of the danmakus and spellcards.
Hell thinking about it we could make each game a 3 part episode, since the final and extra boss would take a ridiculously long time to finish, so first has 1-3, second 4-5 + plot development, and third can be final, conclusion, and extra boss.
that makes a minimal of 18 episodes, where by filling in the .5 games, we can get it to a 24 episode series. We just need danmakus, good animators and the perfect VA.

Maribel and Renko are the central characters, show is largely episodic with some two-parters to start with and features them making excursions into Gensokyo and visiting various well-known and less well-known locales. Plot thickens and gets darker towards the end as Yukari starts showing up. 12-16 episodes, with an OVA featuring everyone who ends up being a recurring character leaving the border for a while for whatever reason.

Come to think of it, basically Doctor Who with college lesbians instead of the Doctor and a shrine instead of the TARDIS.

While I agree that in SSiB the whole point of danmaku was thrown out the window, but a lot of the exaggerated grand spectacles was really sublime at best when shown outside the game. Masterspark that looked like it could blow an entire city block was just a small beam of light, the hundreds of knives of deflation world was only in the twenties at best, and lets not get into Reimu's sealing powers.
