by the way, i'm not being a smartass or anything when I say that. I, actually, am just finishing up University in a few weeks, and I decided to gauge my progress. I went and listened to Pimsleur's 3rd CD (most advanced apparently) and it all made sense to me. I felt smart. Then I turned on Gaki no Tsukai and felt like a dumass again.

Just goes to show that learning from a textbook gives you a good structure, but still wont make you fluent.

Yeah, I'm quite the same with tv shows and such. Vocabulary (which grows mainly while reading, hence kanji learning), hearing practice and if possible talking practice are now the only things to do.

I feel like I'm at this stage, but the weird part of it is that there's probably a lot of grammar that I have yet to learn.

Next year (after my summer classes) the class drops from 6 credits a semester down to 4 credits, so basically it's all about vocab/speaking/hearing/reading from then on. Then, 4th year is just reading books/writing essays etc. Like an english class

It's dry, but it's good for basic stuff; my teacher (who is Japanese herself) rarely follows the lesson plans to a T anyway, so it's all good

Believe me, there is. Tons of shit to learn, especially idiomatic phrases that are less common but still find their way into mainstream usage. Also, don't forget to learn some classical Japanese as well (some of it is still used to give texts more flavor)

To get to the examples go there: http://www.coscom.co.jp/ebook/2001kanji/diskdata/vol2-top.html and click on Level 1, or 2 (3 has no example sentences). Then click on one of the "Free sample" groups and again on the Kanji you want to see the example sentences of. On the top of the page you will see "Examples 1 2 3". Just click on one of those to get to the example sentences.
There aren't too many free examples though, but you'll get the idea of what it's about.

I have to warn you about the CD version though.
It's a great resource and I bought it instead of the books, so don't get me wrong, but it uses pictures instead of actual text, so if you want to copy&paste the example sentences into a srs you're out of luck, unless you use Anki or something else that supports pictures.
I don't think it's much of a problem since typing it up helps me remember it better, but I thought I'd let you know before you buy it.

The textbook we used in high school when I first started using was that "Adventures in Japanese" one.

Nowadays I'm not using a textbook but studying independently from a variety of sources; most importantly I'm practicing by exchanging letters with a penpal in Hiroshima, and by translating texts back and forth.

I transferred Unis so I went from using Genki to Structural Functional Japanese. Structural Functional is so fucking horrible, and whether Genki is great or not, Structural Functional makes it look like a godsend. I'm going to buy Genki II just so that when I need to learn a grammar pattern for class I can get its name from the chapter we're in, look it up and Genki and study it there.

Terrible ass book either way you slice it. It doesn't present the grammar forms in any logical order, kind of introduces everything at once in the first few chapters and then forgets it told you about them, doesn't explain them, but then ten chapters later suddenly they're back as if they had actually explained it the first time around (you know, back when you were still struggling with kana).
