I thought George Carlin kind of sucked. He had a few good bits, but I found most of his stuff to be mediocre. He just did it about topics that were considered 'edgy'.

I agree with what you said about experience. There are a few comedians who are currently making the rounds that I like. I personally think Bill Burr is fantastic. If he doesn't spiral out of control or something I think he'll be one of the "new" greats.
Last time he was in town though Joe DeRosa was opening for him, and that guy is fucking dreadful.
