There are many examples for stuff like this, like tomatoes obviously but also botanically strawberries aren't berries, but they serve the same function as berries so in a culinary context they are berries, and their cultivation technology is closer to vegetables so in some places they could be classified as vegetables, in the agricultural university I graduated from they were classified as fruits though.

It's because you have people who specialise in certain fields right. So a fruit cultivation specialist knows how to cultivate bushes and trees since that's the habitat of fruit bearing plants in general. Learning watermelon cultivation for a specialist like that would be retarded, when watermelon is cultivated the same way as pumpkins and other vegetables, why not just have the vegetable cultivation specialists do watermelons too? It's just a matter of practicality but the same goes for other contexts. A chef who specialises in making foods from fruits also learns how to use watermelons because in a culinary context it's the same as other fruits. What does a cook care if watermelon grows on a tree or on the ground? For a botanist it might be relevant that a strawberry is actually a multiple pseudocarp but for the food processing plant it doesn't really matter. It's a small, round, soft thing with high sugar content, why build different machinery for it when the machine for berries works just fine?
Most people in their daily life only encounter things in a culinary context though, most people cook but not that many people are farmers, or botanists or food processing workers. So the culinary context generally works fine but you can be aware that in other contexts things are classified based on different perspectives.
