I'm also half Chinese, there are a lot of us. I think a lot of minorities in America, particularly Asian minorities are drawn to Japanese culture because it has historically had a very active following on the English web. It presents an alternative axis of media which is deeply appealing to people who feel alienated by white cultural production.

Idk about mainland Chinese weebs though, that seems like something very different with its own history and nuances.

Took karate when I was like 8 because it was the only cool thing to do in my town. Didn't stick with it long but there was a cute girl in my class and that made me learn all the numbers and karate terminology. Started learning in earnest when Pokemon GS came out in Japan a couple years later and I somehow got a ROM and wanted to learn enough to play it.

Thing about Japanese culture, is that it both has a heavily collectivist aspect to it, meaning it's actual society, and popular media, which tilts to the opposite end of the spectrum. I've seen plenty of people, overwhelmingly girls, who were attracted to the culture and the language primarily for the first reason.

Because I like their media. That's really it. I don't identify with them because I don't know what it's like and I don't identify with my countrymen because I just want peace and quiet; the States are often very loud. Fireworks (where I live they do them several months a year, sometimes past 10 pm), cars honking, engines revving, people yelling... and a general lack of consideration for others. I used to live by a trail which I'd hike regularly, but once it became popular, people started littering, leaving dogshit in the middle of the trails, whooping loudly because they like to hear their own echoes, walking around with their music on full blast, walking their dogs without leashes and being surprised when the dogs get aggressive... being individualistic isn't bad by itself, but when nobody considers the effects their actions have on others, there is a problem.

I like my burger culture plenty, but I started learning Japanese because I wanted to be one of the cool kids who read untranslated stuff when I was 17, and I gave up because that is not sufficient motivation to learn a whole ass language. When I was 20 I decided to learn a language for "self improvement" or something gay like that, and I picked Japanese because I already had built something vaguely resembling a foundation. I still had to learn from the ground up, and I still barely understand anything, but give me enough time and I can probably figure out what a sentence means. Maybe I should try again...
