My EoSD Reimu can easily solo the fight at 5 stars and I feel like I have an alternate set-up that should work at 1 star for her but since my Reimu is 5 stars I will not be able to test it myself. If someone wants to test it with a one star Reimu do this:
Pre-fight: Equip 4 maxed out Red Marisa cards on her regular spells (just to be save, might also work with other P bonus cards) and have all her skills at lvl 10. Obviously have her LW unlocked. Just equip whatever best damage card you have for her LW. Global can't use her absolute best card but it should still work without it.
First turn: Use all her skills, 2 shields, 2 boosts and use her first AoE spell
Second turn: Use her other AoE spell with max boost, no shields. This should easily kill Yuyuko and drain Youmu's first health bar because full breaks.
Third turn: Use 1 shield, boost to the max and use the first single target card on Youmu. If it kills 100% of the time, skip to the final turn, otherwise go to turn 4.
Fourth turn: If Youmu did not gauge burst, boost to the max again and use Reimu's last single target spell. No shields.
Final turn: Final health bar, go all in with every skill, boost and shield Reimu has at this point and use her LW. Should easily kill.

Protip to anyone who cares about SP: Murasa can solo Byakuren in her 2nd fight at lvl 70, 0 LB, max enhancement, and all skills unlocked but not necessarily leveled.
1st turn use all skills and spread shot at 1P
2nd and 3rd turn use focus shot at 0P
4th turn use first spellcard at 0P
5th turn use all skills and second spellcard at 2P
Equip MLB+10 Yakumo Family for best results, but she does overkill so you have some wiggle room. Her high accuracy prevents most RNG fuckery.

If you want to be real fancy and you know you won't be doing anything with the game for a few hours, you can also turn on the longest animations possible to drag it out for even more battles. Assuming it is a long fight, like 5 turns solo Yuuka for Dark Youmu cards, you could get a ton of battles out of it. Just make sure not to lose connection.

Devs made the smart decision of having the final wave of the final event battle block both regular shots so it is possible to straight up softlock yourself there if you have no spells left and can't switch to another character.

The problem with that would be actually killing those fairies with normal spells. Both Marisa and the fairies are spamming defense buffs which is enough to stop pretty much every 8P character from instantly winning the fight with just a single LW. Send in your strongest 5 star character right now and try to just kill the faires with spells while also keeping enough shields to stall until Marisa has no buffs anymore. Then imagine doing that with an 8P weakling. Here is SFES Toyohime on her own stalling Marisa until all the faires are dead but that is a max power character. Marisa may also randomly decide to just never stop using defense buffs so even if you stall for 10 turns she might still just be at max defense and your LW has a power of 100.

Sadly this mochi is the only true HP sponge battle the game had so far. Everything else is multiple health bars which means Flandre can not do anything. It might be good for her LW, I don't have it unlocked yet, but for her regular earth spellcards, the bullet bonus at rank 5 is +30% earth and +30% Heavy, but the spellcard has Earth and Slash, with some Hard bullets. The card only gives the +30% from the earth bonus, which is the same to the 3* Keystone at rank 5.

Completely pointless but Reincarnated Mokou can actually solo one of the main story card battles. No one is going to use her for this because 14 cost but at least it is something she can do.

For mocchi I do Expert solo 8sp full auto with Yukari, Shion and Toyohime because they were the ones that just worked out of the box when I tried. I threw some Yin DEF story cards on Yukari because the mocchi would rarely do enough damage to make her fail; haven't had an issue with her runs since.

EoSD Sakuya doesn't win because of her damage output. She wins because she has perfect elemental coverage and can full break to hell and back in that fight. It's the same thing EoSD Reimu does when she solos the fight but even more extreme.

So my guess would be just timing your P on her regular cards or just bruteforcing with P generation story cards
