Uematsu is a bit more conservative, less adventurous, and overall sounds more conventional. However, this leads to a more professional and polished up sound.

ZUN on the other hand is the opposite, and while the songs often get repetitive, or have disagreeable parts, his new sound tracks never cease to surprise and please me.

I'd say that Nobuo has composed many songs better than most of ZUN's, but ZUN is better on average.

Japanese ZUN is small time; I barely listen to Touhou soundtracks.

For STGs the stuff by Konami Kukeiha Club or Manabu Namiki are the best. And of course, Taito's Zuntata sound team. Guess where Japanese ZUN got his name from.
