So.

I've never watched an anime that was airing. The few anime I've ever watched were always torrent-the-whole-damn-thing.

How exactly do you do this?
Are there, like, e-TV stations where you can stream it, or am I going to have to wait till episodes are uploaded?

There are streams with horrible quality, usually created by different sub groups.
And there is http://tokyotosho.info/ for torrents with new eps and everything.

Depends.
If you understand japanese, watch the stream as it airs. Otherwise wait for tokyotosho to get it. Depending on the group it can take from a few hours to a month after it has aired. Fortunately Umineko is rather high profile so expect 1-2 days.
Just set the tokyotosho.info rss feed with uTorrent so it automatically downloads the episode when it's released. Remember to tweak the settings well so you don't get duplicates, the Xvid versions or another subbing group.

Streams? You mean, watching the anime in Japanese as it airs?

I think Hinamizawa closed its doors, the only thing remaining (at least for me) is KeyHoleTV, which is horrible.

You could use popular streaming services like Keyhole and Freshverse, both /m/-approved. Quality isn't that great, but it works.

That is, if you watch raws. If you need fansubs, Tokyotosho is the only reliable bittorrent source.
