Old TM is pretty unique. It has a mixture of complicated lore, introspective/philosophical shit, exciting action, and a unique urban fantasy atmosphere. And regardless of what you think of Nasu, his writing is very unique. The old TM stories are the kind of stuff that will stick wit you forever.

You know as cancerous as almost everything about FGO is and how almost everything revolves around it now I still think there's some good things to come out of it. If you think about it there's just WAY too many cool mythological and historical figures that would make cool servants, way more people that could realistically be covered by spin off novels and the sort. That's the good point of the gacha game style, you will need lots of characters and that gives the chance for many individuals to get servant designs and rough personalities and abilities. Yes most of them are incredibly shallow but that can always be expanded latter if someone decides to pick those character up and use them. Having Circe and Sigurd in something like FGO is better than them not existing at all for me.

Tbh KnK is mediocre as a novel, when you compare to actual literature. Obviously it's Nasu's first one, and while he continues to lay out the Nasuverse, many of the dialogues/monologues are on the 'iam14andthisisdeep' level.
The anime elevated the story to another level, with pure kino visuals and sound, and touched up storytelling. My favourite movie is 4 though, which is like half monologues.

Tsukihime was apparently the work that coined the term 真祖 to refer to the Original Vampire and said term was adopted by other works like the Negima series and Strike the Blood series. And Negima was pretty damn big back then. And Higurashi is airing right now, that one is another pretty big franchise featuring a character that is a loving tribute to Tsukihime, right down to obsession with curry. Like sure the action scenes are fine and look great but compared to the average animation in UBW or Zero the characters are really flat and unexpressive in normal day to day environments
The color pallet and shading is also really fucky and some scenes the characters just look wacky like during mapo tofu

Character designs are definitely different but I can't agree that they're worse. The shading/colours in UBW always felt a bit flat to me, especially compared to the films where the "lighting" tends to be a lot more dynamic.

They also simplified some character details in UBW a bit too much for the sake of fluid animation, Rin's hair being a pretty obvious example. Overall I think HF found a more comfortable middle-ground between the UBW designs and Takeuchi's art.

Ultimate Edition is probably the best choice, just grab it off nyaa. If you usually read VNs in a window, you'll have no need for the HD thing they offer. However, you can toggle it on/off on the fly, and the same goes for Vita OPs/music. Openings play only once per route so there's no real need to turn them off (plus you can see just how fucking stupid ufotable is). As far as music goes, there's nothing wrong with the original OST, so you might as well have it set to original, which is what it should be by default.
Mixed text settings with uncensored H-content is probably the best 'classic' way to read FSN - the RN goodies are present and no content is censored. If you're interested in seeing what Nasu replaced the H-scenes with in Realta Nua, you should look up a list of H-scenes (or use the flowchart guide) and toggle the H-scenes off - it's vaguely worth it if you're interested in post-FSN Fate, since Nasu has been eliminating all traces of sex from the franchise ever since he wrote Hollow Ataraxia.

You're not losing out on much by not hearing Shirou say dumb shit for the 40th time, but TL/editing errors will definitely start getting on your nerves quick, considering how the TL quality is not that great to begin with.
