Serious answer: it's a fine starting point, but I think you could do better. EoSD is overall fairly easy and straightforward, but has its share of weird design choices. For what it's worth, it's the game I started with.
I recommend LLS above all else, it has a combination of simple mechanics and easy patterns that teach the basics. Otherwise, MoF and PCB are a lot more generous with resources than EoSD and also have fairly simple patterns, though not at all to the level of LLS. Also perhaps consider MS: it's pretty similar to EoSD, both in good and bad ways, but I just find it to be a more enjoyable game overall.

I started with Embodiment of Scarlet Devil, and I liked it. I would argue that it's the easiest Windows game to start with if you have played shmups but haven't played bullet hell games, since the patterns are more primitive. Played LoLK with a bro and this game is a nightmare. If I considered a point of concentration as my 100%, this game shoved me to 180-200% which is very hard to maintain. In most games one would start leisurely and would gradually focus increasingly until a certain point. This games says "FUCK THAT" and starts you off focused, while making you paranoid enough to just scrape by each chapter. I really can't imagine that game without Point-Device. What was your experience with the game?

The reality of the situation is if you ask 10 different anons where to start, they're gonna give you 13 different answers and at least a third of them are troll answers.
EoSD is fine to start, the mechanics are easy but it is lacking many Quality-of-Life improvements that the later games have (no Retry option in the pause menu, no visible hitbox when focused, no Enemy indicator at the bottom of the screen, etc.).
PCB has a few different mechanics like the Cherry Point system but it's still very simplistic and imo the best one to start with.
IN goes even further with more different new mechanics but arguably the easiest patterns (and it has the best Soundtrack and my favorite 2hu, pic related, but thats beside the point)
PoFV is very different and not recommended as a starting point specifically because of how different it is (I said "different", not "bad").
Mountain of Faith is another good starting point due to going back to its simple roots.

TL;DR start with PCB or MoF.

Everything this anon says is true, but I would like to add that EoSD's lack of quality of life is not as big of a deal as it would be in later entries. Since the bullet patterns are simpler, it doesn't matter as much that your hitbox is not visible, and that there is no enemy indicator, at least for a normal 1CC.
I also don't think MoF is a good first 2hu: bombing drains your power, which means that you can't really bomb your way through the difficult final boss after having a good run.

EoSD is pretty challenging but not too the point where it's bullshit. It doesn't have gimmicks, it lets you focus on playing and getting better. All the characters and songs are great. If you 1cc EoSD, you are definitely ready for other games. I played LoLK after EoSD, and I had a lot of fun (and frustration too, but boy did my skills skyrocket).

I'm still at the final boss of Stage 6 with Inaba, and I absolutely agree, this game is insane. It isn't impossible by any means, however. I got to Clownpiece without using any bombs because everybody for me I would need them, but I ended up opting for doing a bombless run instead. I'm not good at TH at all, but I'm determined to beat it, and it made me improve a lot. It's just a matter of time. Sometimes the game throws in some insane patterns within the stages themselves, I spent more time trying to beat the falling bullets with stars in Stage 6 than any of Clownpiece's spells, those are the parts that I found most frustrating.

Which shot types have you tried? I think ReimuEagle works well, she tears straight through every stage, allowing you to concentrate on the bosses. Don't feel shy about abusing Spell Practice, and then just Spirit and Bomb your way through the parts you don't feel confident you can survive. There's also no shame in bombing stages if it allows you to live.

Mayumi is really hard with Reimu, she doesn't have enough firepower to reliably destroy the haniwa. Youmu is hard to use generally, but her focus attack absolutely destroys Mayumi. Marisa is middle of the road difficulty for Mayumi, but top tier with Eagle spirits.
ReimuOtter is a great all-rounder though, so if you want to stick with her, here are some tips for Mayumi:
first spellcard Archer Haniwa is not as bad as it looks. The blue bullets aim for you. The haniwa aren't worth destroying here, they respawn too fast.
Second spellcard, Fencer Haniwa. For this one I recommend trying to destroy the haniwa, because they'll try to go down the middle of the screen and are likely to slam into you. Take it nice and slow.
Third one is cancer with Reimu, destroying the haniwa closest to the boss doesn't help much because the ones on the edges spew yellow bullets all over the screen anyway. Maybe aim for firing a little left of the boss to destroy the haniwa spawning there, mostly so you don't get smacked by the haniwa itself as it comes down the screen. Otherwise just pray for the best, and bomb away.
Fourth spellcarrd Hollow Inexhaustible Troops. I believe the blue bullets are aimed at you, like in spellcard 1. I'm not good enough to give you much advice here. I usually just bomb it.

Congratulations on the 1CC. I personally didn't find IN much easier than the other games, but WBaWC can be quite easy if you abuse bombs and spirits. Any difficult spell card, you can just bomb, and use the bomb window to grab spirits. Since the spirits last so long, you can save up spirits during the stage so that you have some extra floating around during the boss fight, although you don't really need to overdo this as long as you are good enough to build up lives and bombs during the first 3 stages.

Well, I switched to playing touhou full-time on gentoo instead of the mac. I got my issue sorted out with the Japanese characters. Don't know what the deal was, maybe it had to do with the fact that I tried downloading from multiple sources before I found one that displayed jap characters. Now I can play them all on gentoo with all characters displaying, but for some reason, the pc98 games go slower than the windows games. Play Marisa B for the godly bomb. If you can get to Sakuya perfectly (or even Patchy), you are definitely good enough to 1CC the game, if you just bomb everything you can't deal with. Are you getting enough score to get bonus lives? It's been a while since I played EosD, but I recall there being portions of Stage 3 and 4 (and maybe 5?) where you can get a ton of score if you can make it above the point of collection during massive waves of enemies, but it likely requires you to memorize where enemies spawn so that you can kill them as they enter the screen so that you can stay safely on top. The score from this could certainly get you an extra life, maybe even two.
If you still can't make it, just go through stage 6 and 5 in practice until you can deal with a larger portions of Remilia and Sakuya's attacks. Good luck!

You don't need to set your Windows display language to Japanese, but there's a special option called something like locale for non-unicode programs, which is specifically made for these cases. If that doesn't work, try setting your locale to Japanese too, but I don't think that will be necessary. Yes, while it may cause trouble with non japanese locale it also fixes a bunch of other stuff.
You can always run eosd without it, but then you'll get unlimited fps at sanic speed or like a second of input lag.
Just run vpatch with the non-unicode setting set to japanese. The only problem I get with that option is the "\" being replaced with a Yen symbol.

This part is hell, never managed to do it clean on my runs.
Which shottype are you using? With the winter sub at good power (autumn too probably) you can kill the green fairies while speeding from one screen's to the other before they become too much trouble. The red and yellow fairies' aren't too much trouble if you only move to the left or right. But then, the way I'm doing it, I'm boned by the blue fairies shots meeting the leftovers from the greens. Happens twice too, see webm.
Maybe, instead of trying to kill all greens asap, you could try staying on one side and kill both some greens and blues before they shoot? I dunno. Practicing this part is such a pain in the butt too, made me wish I knew how to write spoilerAL scripts.

1 death at the end of the first 2 fairies, got in the Youkai Kanji and streamed right, but it didn't work.

Bombed Eirin's spell but it fucked up the aiming (since Youmu moves up to slash) and I died when the bomb ended.

Where does SA Extra rank among the difficulty of Extra stages overall? I've been playing through the Windows games in order and it feels way harder than any of the Extras that came before it, all of which I cleared with not too much trouble. I know SA overall is supposed to be one of the harder games, but I still managed to get the Normal 1CC in about a week, just with more practice than usual. The Extra though, I'm starting to think I might have to put it off until I'm better and just move to the next game
