It's not completely wrong what you are saying, but there is still a major difference. The problem isn't that there are specific words like sheets, piles, flocks and so on. The problem is that they additionally use different counters words for them and it's pretty irregular how and when to use chinese base counts, japanese based counts or even use something completely random. There are tips and tricks on how to handle this and it's not impossible to learn. But as for me personally, I think it's a waste of time. I rather learn more vocab and grammar concepts and do this when I'm pretty confident about those. I think it's stupid to confront beginners with this mess, as it's usually done by most text books.

I think japanese has a major difference between casual language and dialects and the "unified" written language. Most language have huge differences between those two, but the main difference seems that the written language isn't as mature as with other languages. You are right that you can't count woods. But thats because "a wood" isn't a thing that exists, it's a material that things can be made of. This is something different again.

But even if your analogy would hold. The problem isn't necessary that you need one additional word to count different things like small animals, big animals, some kind of special animas, thin things, flat things, days, minutes, months and what you have. The additional problem is that you change the counter as well and often in some unexpected and irregular way. So it's not always, one, two, tree whatever thing you are counting. So for example the eight day of the month is "yokka" but when you count things the eight it's "yottsu". This is extremely confusing, if you just change kka and ttsu it would be fine, but like this it's pretty hard to tell four and eight appart depending on context.
