Hey 4chan!
I recently started to make onigiri, and i came across the sweet onigiri fillings with apples, or other fruits. I had an idea of making onigiri with banana and chocolate filling, but i do not know how to season rice for it. In classic onigiri with tuna or salmon i use sushi rice and season it with rice vineaga with spoon of salt and sugar, but that would ruin the taste mixed with chocolate and bananas. Do you have any idea about what i could use to season the rice? Not seasoned rice tastes insipid to me

It seems like you would need to *very* lightly sweeten the rice. Like add a tiny bit of sugar instead of the usual rice seasonings. And skip the vinegar, obviously.

That sounds pretty fucking gross, my dude.

I'm pretty sure salty or savory fillings are the staple of onigiri, you couldn't use vinegar or seaweed that way. Need pickled food or fish.

Vinegar goes good with rice because it can cover the whole rice grain. If you are going to make something sweet with rice, I would recommend making a mochi with coarse rice flour, domyojiko. These are legitimately flavored with strawberry, sometimes real ones, so they are probably the next evolution of your "sweet onigiri." Your idea would just be coming halfway, while sweet mochi makes it actually edible.

Salt and sugar in the rice, very dark chocolate so it's not candy like.

I'd try varying the amounts of salt, and VERY little to no sugar though, the banana might be sweet enough to carry the whole dish.
