For your purposes, go with mkv or mp4. I'm not really sure why mkv is so popular, the only advantage over mp4 that I know of is features like chapters, but while I use that often, I've never seen anybody else do it. But yeah, without drawing this out, go for mkv or mp4.

Handbrake is easy to use, completely free (no 30-day trial or such bullshit) and allows both containers. I think the nightly builds already implement x265, but if you're looking to share, that's probably not to useful because everybody's gonna cry that it doesn't run on WMP.

Similarly, in mpc, some javs play but don't let me use the speed up and down controls, which is something I'd also like to fix, since that's the main reason why I use mpc for javs in the first place

I used cccp and its a very decent codec pack. Nothing you can do wrong with it.
However, I recently changed to K-lite and imo its even better. I can only recommend it anon.

Also when chaning codec packs make sure to get rid of the one you used before getting the new one. Its not good having 2 different codec packs.

tl;dr: get k-lite (or cccp) and you'll be able to fap with speed up and down
