a massive shit

I cannot understand how someone with any degree of mahjong knowledge or dignity can enjoy it.

There are three states to mahjong.

Winning
Losing

People would rather discard safe tiles and ruin their hand than risk giving you the tile you need.

But still playing against various people is really fun. You don't understand how japanese players can build such hands but you're really happy when you can complete a hand.

I do. Sort of. I got into Mahjong on a whim last year, finding & watching Akagi was a lot of help. Taking notes, writing yaku (winning hands) down on paper, is also a good way of remembering them since there's so many.

Saikyo no Mahjong 3D (pictured) is the best computer program I've come across to practice on. You can alter the computer-player's traits, make them better/worse players, and alter their stats as you learn. You can also save your game and load it later on. It also keeps track of the moves so you can review the game.
http://www.4shared.com/rar/ophpEI0R/Saikyo_no_Mahjong_3DEnglish.htm

There's an Android app on 1Mobile Market called Maujong that is riichi (Japanese) mahjong. I really like this game for on-the-go playing since you can play a 1/2 game or 1/3 game, that's about 4-5 rounds per game. A single game of mahjong can last a really long time...

You don't know flipping shit untill you discard one wind.

And then get another on draw.
Then another.

"Surely, it couldn't be all winds i'm drawing, right? I couldn't have just wasted a yakuman, right?"
