Doesn't Vampire the Masquerade have vampires that can step into the sunlight if they are exceedingly good and have true faith or something? They also start to need to feed on blood less and less (Remilia claims that she can't kill anyone because she dines very lightly).

Can we assume then that all the talk about them being big bad vampires as nothing more than an exaggeration? If people found out that they were good at heart and wouldn't kill a human it might make them seem weak.

As for crosses, it is all very dependent on the faith and piety of the vampire itself, as they will feel ashamed when they see the cross, more out of their own guilt than any real harm the cross does.

No. Zounose's dark shit usually has some meaning behind it. Tries to tell a story and shit, and usually succeeds, and the doujins aren't all dark, all the time.

Waita Uziga doujins don't. They try, but more often than not are so focused on being grimdark and edgy that they fail utterly.

There's absolutely nothing in Bram Stoker's Dracula that suggests vampires can't go out in the day. In fact Dracula himself is seen in the book twice during daylight.

The problem with Dracula is he's weakest at sunrise and sunset because those are the only times he can change form and he must stay in the form he chooses until the next sunrise and sunset (Mist, giant bat, wolf, or human). The 3 men who kill Dracula in the end kill him moments before sunset so he's unable to escape them by becoming mist. Sunlight had nothing to do with it.

Where the idea that vampires can't go out in the day or they'll turn to dust must be something from hollywood.

In fact doing a bit of research on the net it appears that the idea vampires can't go out in daylight began in 1922 with the film Nosferatu. Prior to that there is no suggestion in legend that vampires were killed by sunlight.

So not quite Hollywood but close enough.

Eating humans is not about the meat. It's about emotions and human soul. Human shaped tumor won't have emotions or soul.

They eat real people. It's mentioned countless times. The treaty with vampires makes Gensokyo youkai provide living humans for them.

A "war" didn't happen. But there is a written agreement forced on Remi or she would be uninvited from Gensokyo due to excessive feeding. The Human Village never actually got to the point of forming a torch mob, but they were getting close. If Remi didn't want her and her family to be gapped back out into the real world she had to sign it.

The vampire incident as Yukari wants it remembered i.e. as printed in PMISS says that

The actual contract is one in which a monster is offered tribute in order to not attack humans, which is pretty unmistakeably to Remi's advantage.
The whole point of the various references to Suika as a comparison shows that Remilia is comparable to literally the most powerful monster possible, except she takes this role from a larger and higher power mythos (The West). It's also noteable that she's been outright stated (PMISS) and also hinted at (IaMP, Beans, etc.) being as strong as any oni and also essentially an oni.
Remilia gathered an army which most likely means that people either joined her side or she summoned devils; the charisma of vampires like her comes from the immense amount of sway on events vampires have through their power. Whether she actually lead an army as a group or not is unknown.
Literally no-one has ever been shown to defeat Remilia outside of a mock battle (spellcard rules / SWR rules) and even Akyuu thinks that Remilia most likely lost the EoSD fight on purpose. Prior to Suika (who has been shown to lose) nobody even came close.
