The issue with using heat death to counter immortality is that heat death depends on energy/matter being constant. Sure, you can go from one to the other, but conservation must be respected.

Immortality, especially Mokou's variety, fucks that up by violating conservation of mass/energy. Either Mokou's immortality creates energy out of nothing to knit her wounds, etc, or it does not. If it does not, then energy to repair her injuries must come from somewhere, so she is vulnerable to the head death of the universe, and thus is not actually immortal. If it does, however, then Mokou's mere existence would stave off heat death simply by existing. The universe would never reach complete uniform temperature distribution, because her immortality would kick in and redistribute the energy in her body.

In the latter case, such redistribution of energy might discharge energy (or absorb it from) the surrounding system (e.g., perhaps if you encase Mokou in a block of ice, eventually it will all melt, because her body temperature may not fall below a certain threshold).
