I have a friend who's vegetarian

I feel bad for them, they can't enjoy delicious meat. The sad thing is that they always ask me how this meat tastes and if it's any good because they want to eat meat too, but they're too stubborn about giving up being a vegetarian.

You're cooking your meat wrong. Sinewy meat is best cooked low and slow, so that the sinew breaks down and you're left with a nice piece of tender meat. Meat with lots of fat (something like the attached pic) are meant to be cooked at a higher temperature so the fat melts. Of course some things won't melt from the meat, like the clear strip of whatever running part way from the right side of the steak until about the middle.

A big problem most people have when cooking for themselves are not using high enough heat, or simply not having access to high heats needed to properly cook cerrain foods.
