I played a couple of MUDs briefly, but they were pretty empty and people mostly spoke out of character. They were like multiplayer text adventures with stats and that's why I enjoyed them.

What are games like this supposed to be like? The "logs" just read like stories.
Are they just like IRC rooms where you act in-character?

In my experience very few actually strictly enforce role-playing. Because they have so few players they generally end up like a IRC, only with a game you can play while chatting. Practically impossible to make any friends on them because everyone already knows everyone.
