Can you speak it? Can you read it? Can you understand and respond when spoken to?

You're beyond just learning the words in probably even an intermediate course, but a class proper will teach you how to put those words together into meaningful sentances, read and write papers using them, understand how and when to use certain words, correct your pronunciation, understand pitch patterns, and comprehend stuff like music and tv shows. Also some cultural stuff, like going through talking to cashiers and the like. Practical use you'd actually experience in Japan, rather than the stumbling for words you'd probably do the first time.

There's more to language than vocabulary, but if you can read VNs or whatever without looking up words, then you're probably fine without classes.

Those confused me at first, but then I started thinking of sake. My mother pronounces it as "sah-key." Which is great since sa - さ and ki - き are different by a single stroke. The one with one stroke is the beginning of the word, the one with two is the ending.

chi - ち you just have to remember has nothing to do with sake at all because it loops the other way. You just kind of get used to it after writing it for a bit. Mnemonic devices are your friends with moon runes.
