This thread is really making me miss the little Japanese lady that lived next to me.

I swear that woman could grow Eden on salted earth. She always had a magnificent garden.

And she was a great cook. She'd bring damn near a gallon of eggdrop soup over on cold days. Along with hot pots, dumplings, pot stickers, and onigiri. And sweets. She loved baking cakes.

Her husband had some investment shit going. And was part owner in a couple local businesses. Very nice people.

Probably a bad idea to eat it if it's undercooked and not sushi, too. That's how people catch liver flukes etc. in some asian countries, eating raw fish that isn't proper sushi.

Of course, it doesn't help a lot that the mollusc hosts of some mollusc/fish/mammal parasites live in the bay there too, but hey. You cook it, you know it's 100% dead.

I used to think japanese and other asians were barbaric for cutting into the fish when they are still alive. Kind of like torture before you kill it.

But after watching too many Kitchen Nightmares episodes, the alternative seems to be rotten ingredients and refrozen/reheated "food" the are too old.

Nowadays I have new found respect for restaurants with fresh ingredients. And when the reflexes are still kicking, it's proof of the freshness.
(not that I still wouldn't be too afraid of eating this stuff)
