Ether is canonically closer to nothing than anything. It's not something that can be recognized by itself.
The moulded form of the vessels aren't recognized as vessels, but rather the identity of what they have been shaped into. The status of these identities is already that of dead.
The soul that resides within the vessel aren't part of the real world. MEoDP has problems with alien concepts, and you can't get any more alien than not part of the real world.

Frankly, Shiki even looking into a Servant could burst his brain in an instant.
