Actually there's plenty of variation on the theme already. For example you got Kuzunoha, who - while she was certainly a great sorceress - is mostly remembered as being a loving, devoted wife and a good mother.
On the other hand you got characters like Tamamo no Mae (probably among the more famous ones), who was a seductress and excellent shapeshifter, but not really that amazingly powerful when it came down to it. Although she has moved into public perception as a nine-tailed fox since, which isn't entirely unlikely since it was about 800 years ago that she was last out making the world slightly less safe.
The story however doesn't tell how she came back from the dead.

You also got some indication that malevolent fox spirits were indeed considered a very real threat to be taken seriously. For example, the white fox of Suwa who has been suggested to have bewitched Takeda Shingen in his youth (although a closer inspection makes it sound more like happy relationship than bewitching). There is also the fox haunting of a subject of Toyotomi Hideyoshi, which was considered serious enough that Hideyoshi himself wrote a personal letter to Inari threatening with the extermination of foxes in Japan if the offender would not cease the haunting.
Apparently the haunting did cease, although I'm wonder how exactly the letter was delivered.

Probably to a temple, there was another case where a letter was addressed to Guanyin and there the letter was sent to one of her temples. As an aside, such requests are usually answered via dreams.

Also, wasn't there a few sequels about Tamamo's story? I think one involved some priest breaking the killing stone so that she could pass on to the afterlife.

And yes, the Sesshoseki was supposedly cleansed and made perfectly safe to touch after Tamamo no Mae was persuaded into ceasing her haunting. However today Tamamo no Mae is regarded as a great youkai and a representative of her kind, as Shuten Douji for oni and Sojobo for tengu, making it unclear whether she is considered dead or not.
It's not really clear whether the big three are considered "historical" mythical beings or as being presently alive.

Not sure if it's a miss in translation, but in order to recruit Omachi, you need to recruit Masamune, for which in turn you need to capture Nogiku, for which in turn you need Hibachi, for which in turn you need to capture (and not Moustache!) Kazemaru.

And the game tells you nothing about it.

Against the demon army, just hold out and stall. After a while there will be a timeskip a few months ahead, after which the demon army is significantly weakened and you get a couple of provinces of breathing space.

Until Mamizou showed up, not really. Just Chen (who is, by all means, pretty much just a cat that shoots pretty lights) and Tewi (who holds a bit more weight, being an ancient historical mythical creature).

However, both Tewi and Mamizou have powers that are mostly in a different niche from Ran, so it's hard to compare them in any meaningful way.
