From a MMA point of view

Yuuka: slow but good technical boxing, hard hitter, good trips from clinch, good top control on the ground, devastating ground 'n' pound, won't go for submission except standing rear naked chokes and guillotines

Reimu in pc98 outfit: real aikido: aikido/judo/jujutsu, amazing trips, throws and joint subs, will punch your face given the correct timing

Yuugi: Heavy handed but stand up is mostly powershots, 1hko haymakers, unstoppable takedowns, top notch wrestling, vicious ground 'n' pound, good catch wrestling subs

Kanako: strong stand up from uechi-ryu base, powerful striker with good technique and timing, superb takedown defense, shitty ground game

Kaguya: sloppy striker and terrible takedown defense, 9th grade back belt brazilian jujitsu so she can kill you while on her back, surprisingly good sweeps, amazing lay 'n' pray

Meiling: same as Kanako but with wingchun base, faster and more athletic, doesn't hit as hard

She seems to me as someone who is all-around good with no real weaknesses (apart from maybe slow movement?) so I think boxing would waste some of her potential. I can see Yuuka in a ring for all-out mixed martial arts, and I can't limit her down to just one style.
