When a Hyper appears, you can grab it and keep it in stock (up to 5). If you use a Hyper whilst another one is on the screen it will turn into a point star. Activating Hypers increases your shot power + chaining power + makes chaining a little easier. It also increases your rank, activating more than 1 at a time as has a more drastic effect on your rank. Don't worry about it raising your rank though, it's barely noticeable really.
