That's cause Archer's haxing his swordmanship. He has some minor talent with it, but all of his skill at wielding swords comes from the swords themselves. When he recreates them, he recreates their will and history, which basically makes the swords 'wield themselves' through his hands.

When Shirou traces the swords in UBW, he uses them with his own skill (unlike Fate were he makes an Auto-Caliburn) and HF (where he can even use the special skills associated with the weapon).

Archer is good enough without the weapon history hax.

True, by the time he becomes Archer, he has plenty of actual combat experience to be an actual swordsman, but never on the same scale as, let's say, Saber calibur, namely due to the fact that his skill as a natural swordsman isn't as good.

That being said, he makes up for it by tracing and recreating the weapons. However, every weapon he recreates is done to the same degree as when he created Caliburn in the Fate scenario. The reason for that is because if he didn't, every single one of them would shatter the moment he used them even once.

Shirou's main talent with swords is the fact that he can perfectly reproduce a replica of it, down to the very history and age of the weapon - if he didn't, then the weapon itself wouldn't be so powerful. So it's only natural that those swords will also possess the same 'will' that Caliburn displayed in the Fate scenario.
