Yeah, I think that's the reason why I love Meiling's design as well, the red of her hair and the green of her clothes work really well, especially when she has blue eyes as accent. In her case, she looks way worse with red eyes.

Sakuya's eye color is blue and has been relatively consistent ever since PCB.
I think she had red eyes in EoSD because of the scarlet mist and only she was affected because she's the only human in SDM.
She already had blue eyes in the endings of EoSD, so it was definitely intentional.

Youmu's red eye color in PCB is more complicated.
I've seen theories that the spring she collected is to blame, but it's more far-fetched.
ZUN also didn't bother coloring her eyes in PCB's endings, so there's no evidence that her eyes change back to blue afterward.
Then in IN, her eyes change from blue to red, but you all know what happened in the ending.
It doesn't really count, but it still demonstrates that she's the only character sensitive enough to change eye colors.
Until PoFV, Youmu's eye color was probably even a darker blue than Sakuya's on average, but then it suddenly changed to silver in TD.

My personal theory is that Youmu's eye color changes depending on the balance of her two halves.
Red means more youkai than human, blue more human than youkai and silver as human as youkai.
Incidentally, Youmu's phantom half has the same color scheme. In IN it becomes red while you fill the youkai gauge as Solo Youmu.

Considering PMiSS likens them to air and says they can pass through any obstacle, I think you can walk right through them.
But it's a bit more complicated because Myon is sometimes shown to be physically tangible, e.g. Youmu holding it in IN or sitting on it in TD.
I think it can just materialize and demateriliaze at will.

I just remembered, but phantoms are actually shown to pass through people in Strange and Bright Nature Deity chapter 2.
But there are also images of the phantoms that accompany Yuyuko carrying stuff around and even one of Marisa just grabbing a phantom in PCB.
