Youkai in general are pretty much just hunter-gatherers, living in the wilderness. They hardly ever travel in groups, build dwellings, or engage in any complex social behavior.

Notable exceptions would be the Kappa and the Tengu. We don't know much about how they live, but its said that they're much more civilized.
